Shell 6 egg whites 1/2 tsp. cream of tartar 1/4 tsp salt 1/2 crushed saltine crackers 1 3/4 cup sugar Filling 1 pkg (8 oz) cream cheese 1 cup sugar 1 tsp vanilla 1 10 oz carton whipped topping 2 cups miniature marshmallows 1/2 cup mini chocolate morsels Topping 3 cups sliced strawberries coated with 1 cup strawberry jell 1 tsp lemon juice extra mini morsels if desired In a mixing bowl, beat egg whites, cream of tartar, and salt until foamy. Gradually add sugar, heating on high until stiff peaks form (do not under heat). Stir in finely crushed crackers. Spread in 13x9x2 inch greased baking pan. Bake at 275 degrees for 50 minutes. Turn oven off (Do NOT open door) and let stand overnight. Beat cream cheese, sugar and vanilla until smooth. Gently fold in whipped topping and morsels, and marshmallows. Spread over meringue. Chill for 4 hours. Cut into 16 pieces. Combine topping ingredients. Spoon 1/4 cup over each piece. |
